Fiskegull AS – Innovative and tasty use of salmon skin

Norway has a turnover of over 100 billion kroner annually in seafood exports, with the majority of this turnover coming from salmon. The skin of the salmon is often used for animal feed, but we at Fiskegull AS see the potential in making something more valuable out of this by-product. We buy the salmon skin and process it into a tasty snack.

Process and flavor variations

The skin used is thoroughly cleaned of scales on one side and fish meat waste on the other. We have experimented with many spice flavors, but have decided to start with two to three of our favorites:

  1. Natural lightly salted
  2. Lightly salted and coated in egg yolk

We at Fiskegull AS are convinced that these flavors will appeal to Nordic palates. Although we are starting with these variants, only imagination sets the limits for future flavor variations.

Feedback and response

Our trial production of these flavors has been thoroughly reviewed by the Norwegian Food Safety Authority. We have also distributed samples to get feedback on the flavor. The response has been overwhelmingly positive, with descriptions such as “fantastic” and “delicious.” Although some were skeptical at first, they were quickly converted by the delicious taste.

Chefs and other professionals in particular have praised the product as “crunchy and delicious”, and they see it as a nice treat for guests, preferably with beer or white wine. The product is perfect as an appetizer or as part of a meal. The satisfying crunching sound makes the experience even more enjoyable.

Market potential

With such a positive reception from both the Norwegian Food Safety Authority and taste testers, we are confident that Fiskegul has great market potential. Not only does it taste great, but it is also a healthy snack full of nutrients. We are convinced that taste is the most important thing, but the health benefits come as a significant bonus.

  1. Cleaned leather: We start by thoroughly cleaning the leather on the outside, which removes all scales and gives a clean surface.
